Sweet Potato Rosti with a Tracklements Kick

When it comes to condiments, Tracklements win every time.

Their newest jammy creation is the Hot Habanero Jam. I was tasked with creating something delicious, and for me when its recipe testing, I choose breakfast every time.

Sweet Potato Rosti with Hot Habanero Jam, poached egg and Feta

You will need:
  • 200g grated sweet potato (peeled)
  • 1 onion 
  • clove of garlic
  • 2 eggs (1 for the mix, 1 for poaching)
  • sprinkle of paprika, chilli flakes, salt and pepper
  • Spinach 
  • Feta 
  • Tracklements Hot Habanero Jam
  • olive oil

How to:
  • Grate your sweet potato and finely chop your onion
  • Saute your onion and garlic until soft 
  • mix it all in a bowl with one egg and add a sprinkle of paprika, chilli flakes, salt and pepper
  • make into patties and squeeze out any excess liquid 
  • heat the oil in the pan and start to cook 
  • keep tossing them over, they might start to fall apart but you can easily put them back together 
  • after about 15 mins of cooking, you can poach your eggs
  • add some spinach, flip your rosti on and add a dollop of Hot Habanero Jam
  • add your poached egg and finish with crumbled feta, voila! 

A breakfast with a chilli kick is the best kind of breakfast. 



  1. I didn't know that sweet potato can be used to make such a yummilicious dish.I love sweet potatoes but never thought to make it in this way.
