Tofu Red Thai Curry

One of my besties, Sophie, is vegan and a cracking cook. She manages to flavour everything perfectly and her meals are far from boring. 


I was sent a handful of goodies from Wing Yip and tasked with making a delicious oriental dish. We put our heads together and decided on a tofu, red Thai curry, and bloody hell was it amazing! 


You will need:
  • Mai Siam red Thai curry paste
  • Courgette
  • Aubergine
  • Red pepper 
  • Mangetout
  • Green beans 
  • Ginger 
  • Fresh chillies
  • Kale 
  • Cauldron tofu
  • Lime 
  • Mai Siam coconut milk 
  • Onion 
  • Garlic 
  • Fresh coriander 
  • Cashews 
  • Rice


How to: 

  • Start by chopping your onion, garlic and ginger. Add some oil and fry these on a gentle heat.
  • Throw in your chopped courgette, aubergine, pepper and a generous sprinkle of chillies, salt and pepper.


  • Add in 3 heaped tablespoons of red Thai curry paste and stir it all up.
  • Add in your tin of coconut milk and let it simmer.
  • Meanwhile chop your tofu into big chunks and fry on a low heat - this will be ready to add at the end. 


  • Chop all your other veggies, it's best for these to go in near the end to add some crunch.
  • Cook your rice. 
  • Once your courgette and aubergine has softened, add your greens, tofu and some chopped coriander. 
  • When your rice is fluffy and the curry is smelling divine - plate it up and garnish with coriander, cashews and a squeeze of lime. 


In total I would say it took around an hour - when it come to cooking a veggie curry I don't tend to do things by timing. I taste as I go along and add things when I think they are needed. 


Since moving to London, I don't tend to cook as much but this curry was to die for and I'm definitely adding this to my go to list of faves. 


A couple of glugs of wine and Instagram shots later, we were completely stuffed and already planning our next dish.
