Perfect Porridge Challenge Part 2 - Coconutty Porridge

Here's one for those who don't do dairy. 

All hail the coconut milk oats. I adore these because they taste so creamy and delicious. I started to cut back on dairy a couple of months ago and coconut milk was my savior. I tried soya, almond and oat milk, but was shocked by the amount of hidden sugar that was packed into the cartons and I wasn't a huge fan of the plasticy taste. In saying this, I am yet to make my own almond milk, as the idea of a raw, cacao, almond milkshake makes me feel a bit dizzy.

Don't be put off by the high fat content of coconut milk either, as long as it is in moderation then it is all good, like dem avocado's.

For the coconutty porridge you will need:

  • 1/4 tin of Full fat coconut milk & some water
  • Flahavan's oats
  • Cacao nibs
  • Fresh Rasberries
  • Shredded coconut
  • Almond Butter

I mix my coconut milk with some water so it lasts longer. I usually get about 4 bowls of porridge out of one tin. It is also amazing for making smoothies or curries, so I often use the remainder of my tin on this.

How to make the coconutty porridge:
  • Heat your milk, water and oats and let them simmer for around 5 minutes. 
  • After a couple of minutes, stir in your cacao nibs.
  • Get all your toppings ready and once all cooked, sprinkle your shredded coconut all over.
  • Add a great big spoonful of almond butter and finish with fresh raspberries (next time I'm going to try frozen ones)

All that is left to do then. is pour your tea and tuck in.

This is one of the simplest recipes ever and down to the cacao, almond butter and creaminess of the coconut milk, they feel deliciously naughty, but I promise they are nutritious and a fabulous way to start your day.
